Beef liver: recipes for children

The reasons why children refuse beef liver are the appearance of the product, its taste and smell.

Kids are gourmets and aesthetes by nature. In matters of nutrition, you cannot find more fastidious critics.

Whether a child accepts a dish and whether he wants to eat it depends on how he sees it when served.

Each mother will figure out how to put food on a plate herself, knowing the tastes and preferences of her child.

It is more difficult to cope with the taste of the dish and the specific smell of the product.

There are several secrets on how to cook beef liver:

  • thoroughly clean the offal from films, veins and blood clots;
  • rinse the liver thoroughly until the water runs clear;
  • Before cooking, soak the liver in milk for 2-3 hours.

These little tricks will help you prepare liver dishes and easily introduce them into your child’s diet. So:

Stewed beef liver with apples

The key to delicious food is fresh and high-quality products. To prepare this dish you will need a minimum of ingredients:

  • beef liver - 500 g;
  • small onion - 1 pc.;
  • sweet and sour apple - 1 pc.;
  • salt, sugar;
  • vegetable and butter.

Main stages of the cooking process:

  1. Clean, rinse and soak the liver. If you cut it into small pieces before washing and soaking, then the preliminary stage of preparing the product will be reduced to an hour.
  2. Heat a frying pan, pour a little vegetable oil, and start frying the liver. Fat and spices are used to a minimum in dishes for children. It is better to avoid the golden brown crust altogether.
  3. As soon as the liver has changed color and lightened, add the onion, cut into short thin strips.
  4. Stir the onions and liver to cook evenly until the onions begin to brown.
  5. When the liver and onions are fried, add salt to them, mix well and leave in the pan for another couple of minutes.
  6. The last to be introduced are apples, cut into strips, thin slices or small cubes. The apples are lightly fried, as are the onions.
  7. When the apples begin to release juice, add a pinch of sugar and a small piece of butter, cover the pan with a lid.

Sugar will provide a beautiful color and harmoniously combine flavors. Butter will add tenderness and make the texture of the dish more uniform.

If the apple has released its juice well, then there should be enough liquid to steam the liver. If there is not enough liquid, add a little water and let it evaporate to bring the liver to full readiness.

When serving, the dish can be lightly sprinkled with sesame seeds. Apples can be easily replaced or combined with pears.

Liver pancakes

Liver pancakes are tender and juicy. When serving, garnish the dish with vegetables if they are included in the child’s diet.

To prepare you will need:

  • beef liver - 500 g;
  • small onion - 1 pc.;
  • chicken eggs - 2 pcs.;
  • semolina or flour - 1⁄2 tbsp.;
  • salt;
  • vegetable oil.

The cooking process is as follows:

  1. Peel, rinse, soak the offal.
  2. Grind the liver and onion with a meat grinder or blender until mushy.
  3. Add salt to the mixture and add semolina or flour, mix and leave to brew for half an hour.
  4. Add flour gradually. If you add all the flour at once, it will form lumps. Semolina swells more evenly, providing a viscous consistency to the minced meat.
  5. The crushed mass should settle in the refrigerator under film. The longer the minced meat sits with flour or cereal, the more gluten will be released: the mass for the pancakes will become more homogeneous and viscous.
  6. Heat a frying pan, add vegetable oil and fry over medium heat. Use cookie cutters to create unique shapes for your pancakes.

A sign of readiness is a change in the color of the minced meat and the appearance of a golden hue.

Steam the fried pancakes in a frying pan. Add half a glass of water to the container and cover with a lid until the liquid boils away, or place the pancakes in the slow cooker to steam for 10–15 minutes.

How to properly introduce complementary foods

Liver dishes in the food of children in the first year of life should be simple and healthy. For the first time, you can’t come up with complex recipes with many ingredients. It is enough to properly boil a small piece, grind it to a soft puree in a blender, and give it to the baby.

When deciding which month is best to introduce complementary foods, you should consult with a pediatrician who regularly monitors the baby. It is not recommended to start before the seventh month or after the ninth. The optimal period is 7-9 months.

You need to give one teaspoon. If no negative reaction occurs within one or two days, and the child does not refuse such food, then you can increase the portion or add it to vegetable purees.

Chicken liver: recipes for children

Fried liver in dishes for small children is not as healthy as boiled or stewed liver.

Chicken by-products cook faster, have a less pronounced smell and specific taste.

The youngest gourmets will love the pate. Older children will love stewed liver with cream.

Pay attention to these dishes:

Liver paste

To prepare, you will need chicken liver; pate recipes are suitable for a slow cooker or double boiler. Steaming the products makes the pate juicy and tender.

For 500 g of liver you will need the following ingredients:

  • carrots - 1 pc.;
  • onion - 1 pc.;
  • salt;
  • butter.

The process of preparing pate consists of the following steps:

  1. Rinse, clean and soak the liver.
  2. Boil or steam the product together with vegetables until cooked.
  3. Grind the liver, onions and carrots with a blender or meat grinder until the mass is homogeneous.
  4. Add salt and butter to the still warm pate and mix well.

Butter binds the ingredients together while the pate hardens. For the menu of the little ones, it is better to avoid butter.

Older children will love the pate roll. To make a roll, spread the mixture evenly on cling film. Spread butter over it in a thin layer. The roll is formed and placed in the refrigerator to cool.

Cooking rules for a child

You need to prepare liver dishes for children correctly and with inspiration. This product has a specific taste and if served incorrectly, you can forever discourage your baby from trying it.

To begin with, you should buy a fresh product, with a shiny surface and an even red-brown color. A light sweetish aroma is characteristic of fresh liver.

Before cooking, remove all films and ducts, cut out the green bladder with bile. If this bubble breaks during processing, you need to thoroughly rinse the pieces under running water. There is nothing dangerous in bile, but it will cause unpleasant bitterness.

After processing, you can keep the pieces in milk for 30-60 minutes. This will help get rid of the bitter taste and achieve a more delicate taste. It is important to cook briefly without overcooking. Otherwise the product will become dry. And in the case of veal and pork liver, it will acquire a rubbery structure. If you are distracted from cooking and realize that the meat has become rubbery, it is better to throw it away and prepare a new portion. All beneficial properties in overcooked foods will be lost.

Such an unloved-favorite liver (stew, fry, bake)

At the request of the girls, I present different options for preparing liver. Not everyone loves it, much less children, so of all types of liver I leave only chicken liver, because it has no smell, and as a rule, many people do not like the smell of liver (for example, my sons). Chicken liver is more tender and never turns out dry and tough. Just right for children. I am not discovering America, the recipes are similar to those posted on the forum, but mine are slightly different. So :

1.Chicken liver in sour cream

The main thing in preparing any liver is not to overcook it. The longer it is fried (stewed), the drier and tougher the liver becomes. Any liver is fried (stewed) exactly until blood comes out of it (and some people like it with blood), that is, about 10 minutes on average.

300-400 gr. chicken liver (you can also use beef, pork, any kind.) 1 medium onion 3-4 tbsp. spoons of sour cream 1 tsp flour (you can do without it) salt to taste

Cut off all excess from the liver: fat, films, green places. Cut as you please. Finely chop the onion and sauté it in vegetable oil until translucent and golden brown (for kids, do not sauté, but stew the onion in a small amount of oil, adding a spoonful of water, or do not add the onion at all)

Place the chopped liver and fry, stirring, over high heat, but do not fry, just until the liver sets on all sides and turns white for 3-4 minutes. 3-4 tbsp. Mix spoons of sour cream (you can add more, that is, to taste) with 1 teaspoon of flour (you can do without it) and put it in the liver, add salt to taste, and mix. Let it simmer for 3-4 minutes until the blood inside the liver disappears.

You can cover it with a lid for a while. But if you keep it covered, the gravy will become thinner and there will be more juice.

You can add 1 teaspoon of tomato paste along with sour cream and the liver will look like goulash, which the children loved. You see, they won’t refuse to eat it.

If desired, you can dilute it a little with some water, but that’s if the gravy is a bit thick.

2. Liver pancakes

300-500 grams of chicken liver (can be beef, pork, any kind.) 1 onion 4-5 tbsp. spoons of breadcrumbs (or 3-4 stale pieces of white bread, soaked in milk and squeezed) https://forum.say7.info/topic43621.html (breading recipe) 2-3 tbsp. l sour cream 1-2 eggs salt to taste

Roll the liver a couple of times along with the onion and bread (if done without breading) through a fine grinder. Add 4-5 tbsp. spoons of breadcrumbs, 2-3 tbsp. spoons of sour cream and 1-2 eggs.

Knead everything well with a fork and add salt to taste. You can add more breading or bread. This will only make the pancakes tastier. The mass should not be liquid. Let it stand. Let the crackers swell (20 minutes)

Fry like regular pancakes over medium heat, adding a tablespoon: on one side for 2-3 minutes, carefully turn over and on the other for the same amount.

After turning over, you can briefly close the lid. Pancakes are ready.

3. Liver casserole

The composition is the same as that of pancakes. Grease a baking dish with vegetable oil and sprinkle with breadcrumbs. Place the pancake mixture in a container and bake either in the oven for 30 minutes at T-180 degrees (until lightly browned and cooked) or like I do in the microwave (5-7 minutes at full power until the mass becomes dense, t .it didn’t grab)

Can be combined with any side dish, topped with sour cream.

The most delicious, of course, of these recipes are pancakes.

Bon appetit to you and your children.

Delight your baby with different recipes and experiment. Alternate dishes made from beef liver with those made from chicken liver.

A child’s nutrition is the foundation of health, on which his harmonious physical, mental and mental development depends. It is very important which foods, in what sequence and how are introduced into the baby’s diet. Recipes play an important role, because the method of cooking affects not only the taste, but also the content of nutrients, minerals and vitamins, which especially applies to meat and liver.

Which products to choose for baby food

Hand-cooked children's dishes deservedly have the most supporters. The offal is affordable for most mothers; it can always be bought at the nearest butcher shop or supermarket. The cooking process takes a small amount of time. At the same time, young parents can be sure that the composition does not contain preservatives or other harmful additives.

Ready-made baby food with liver

Many mothers do not cook themselves, but prefer ready-made purees from a jar. This is a good option for those who are going on a trip or need urgent food for a hungry baby.

Responsible manufacturers prepare baby food responsibly and in compliance with standards. But along with banks from reliable manufacturers, their cheap analogues with dubious composition and quality may also be on the shelves.

Therefore, before you start buying food for children in jars, you need to familiarize yourself with the reputation of the manufacturer.

Among the best baby food manufacturers whose lines include jars of liver are the following brands:

  • Agusha,
  • Heim,
  • Spoon in palm
  • Home,
  • FruttoNanny,
  • Semper,
  • Theme, etc.

It is better to choose small jars so that the baby eats everything in one or two times. After all, such products cannot be stored for more than a day, and throwing them away would be illogical, since such food is not very cheap.

    At what age can liver be introduced into complementary foods?

    According to the advice of pediatricians and nutritionists, liver should be introduced into children’s diets no earlier than 7-8 months of age. By this time, the child is usually already familiar with the taste of meat, and the taste of liver will not cause a negative reaction in him. However, these terms are not strict for the first complementary feeding. Up to 1 year of age, the baby may not digest this product. It all depends on the individual characteristics of the organism and the pace of its development. Over time, this problem will go away, and liver feeding will become possible.

    When including liver in the diet, it is important to follow all the rules for introducing a new product in order to protect the baby from unpleasant consequences:

    1. Start with small volumes. After a small amount of the product eaten, you need to monitor the child’s reaction. If he does not have an allergic reaction, his stomach does not hurt and his stool is normal, then the volume of the product can be increased, gradually bringing it to a full portion.
    2. Do not force feed. The baby must try the product, this may take more than one day. There is also no need to try to feed the entire portion. The baby will eat as much as he needs to be satisfied.
    3. Properly prepared dishes. You should choose recipes according to the age of the baby. Liver is an ideal option, since you can use it to prepare a lot of dishes that can be easily eaten by a baby up to 1 year old. For example, soufflé, pudding, pate or soup (more details in the article: at what age can you give pea soup to a child?).

    Minuses

    Along with the positive aspects, like other foods, offal in a child’s diet may not take root and have a number of negative consequences.

    First of all, due to the specific taste, a child may not like such food. In this case, you should postpone getting to know her for several weeks. After a while, you can try offering it to your baby again.

    A much bigger problem is that due to the individual characteristics of the body, an allergic reaction may develop. In order to avoid this, it is better to administer the product after consulting a doctor.

    There is a stereotype that such food is dangerous for children, since it contains all the bad substances from the “owner’s” body. But this stereotype has long been scientifically destroyed. It does not contain toxins that accumulate over the life of a bird or animal. Harmful substances are excreted with bile.
